No Fail Fruitcake Recipe
NO FAIL BOILED FRUIT CAKEI love to cook and so I would love to share one of my favourite fruit cake recipes. About the second time I made this fruitcake I made a mistake with the flour and made it with plain flour instead of self raising and you wouldn't believe it, it still turned out OK. Of course it didn't rise, but the fruit was still distributed evenly and it was more like a slice rather than a cake. So whatever you do with this cake it still turns out OK.
So here it is and I hope you enjoy it!
Take 350 grams of sultanas and 350 grams of mixed dried fruit, cover with water in a large saucepan and boil for 5 minutes or until fruit is plumped up. Drain water off and add 125 grams butter 1 cup of brown sugar 1/4 teaspoon Almond Essence 1 teaspoon Vanilla Essence
Mix the above with the fruit while it is still warm and then allow to cool somewhat.
When cooler, add 3 well-beaten eggs, then approx 1 and 1/2 cups of self raising flour. (You may need more if white flour is used. I always use wholemeal and even then you may need 1/4 cup more, depends if you like your fruit cake moist or more on the dryer side). Add a pinch of salt and some cinnamon or other spice if desired.
Bake in a 9 inch lined cake tin at 180 Degrees Celsius for about 40 minutes or until cooked. I use a big cake tin to bake it in because it cooks quickly and it is a nice size to slice up.
